Today was an excellent day all round. I got up early this morning and ran out to the gym, did some strength training at the bootcamp class and then ran the long way home reaching a total of 4 miles. I felt great after it. It was raining and windy and I felt so refreshed and energised.
I got home and Martin had been running on the treadmill so after that the two of us went to take Murphy a walk and then I saw my aunt and my mum.
I had to get changed and ready super quick after that (which is not easy for me as I am pretty much chronically late for everything) as I was heading out for lunch with my gran, my mum and my aunt. This was a wee joint celebration lunch for my mum, gran and my own birthdays and for Mother’s Day. We had a lovely lunch and I felt like a bottomless pit and wanted to eat everything in sight!
When I got home, I had a wee nap and then Martin and I headed to Ayr for a pals night for my birthday. We spent some time having a wee drink in Paul’s flat and then went to Pirate Pete’s. This is i a place that is a kid’s soft play through the day and at night changes into a laser quest area. So basically, the soft play and everything stays there but adults can book to go in and you run about shooting your pals. I was TERRIBLE at it but I had so much fun. We used to go quite a lot and then stopped for some reason, but I can definitely see us going back soon. It was a great laugh. Afterwards, we headed back to Paul’s for a couple more drinks and then came home. I fell asleep as soon as my head hit the pillow – I was exhausted!
Tonight I got home from work and prepped up Martin and I’s meals for the rest of the week. I’ve made chilli for lunches and dinner on Wednesday, chickpea, chorizo and spinach casserole for my lunches and tuna pasta for my dinner for tomorrow as I’ll be out at DanceFest with the school all night.
All this literally took about 20 mins to prepare and then it all just cooked away itself. I love feeling prepared food wise because then I know I’m not going to eat *too much* of the wrong things.
Today we had my gran and papa over for dinner and some drinks. They got us our nice plates for our engagement and got us our table for our wedding so I thought it would be nice to have them over to get to put the table and plates to good use!
Martin spent the day cooking and watching the old firm while I walked Murphy, worked and then cleaned the house.
We had a great afternoon and evening and the food was delicious. It was so nice to spend some time with my grandparents and to treat them to something nice.
Today I am tired but I do feel quite accomplished! I have achieved nearly all I set out to do today, apart from make it to my gym class (but I made up for this with a strength workout at home, maybe not quite as good, but better than nothing) and getting an early bed!
I have managed to get through a bit of work for school today and have prepped loads of meals for the week ahead, so I should be healthy and sorted until at least Thursday, which takes a bit of pressure off! The pic is of a chicken and chorizo casserole that I am currently slow cooking – this is an adventure in itself to be honest as I am terrified of leaving it on!!
It is a recipe my mum gave me so I am hoping it turns out as tasty as hers!
A big messy bowl, maybe, but this dinner was delicious. I found the recipe on Sprint Kitchen, the website of a runner I follow on Twitter. It was supposed to have Harrisa spice in it but I couldn’t get this in Tesco so I made my own little spice mix using paprika, cumin and chilli powder. The recipe has chickpeas, peppers, spinach, tomatoes and my favourite – feta cheese – in it. It was delicious and so good that I made more for lunch on Thursday and Friday.
This was the perfect food to refuel after a 4.5 mile run in the dark. We ran circuits and then finished off with 100m hill sprints with 100m recoveries.
Earlier today, I went to see my wee pal Amanda get her wedding dress fitted. She is just gorgeous in it and I cannot wait for her wedding day.
A bit of a cop out picture tonight but that’s because I forgot to take a photo of the box and when we cooked the meal I devoured it before I could take a picture!
Last week Martin ordered new contact lenses and got a Hello Fresh voucher with it for £20 off two boxes. I’ve been keen to try it and with a half price discount I decided now was the time.
The box got delivered today filled with meals to do us for the next three nights. Tonight we had Cajun pork with garlicky spring greens. It was delicious! Totally healthy and decent on macros too.
Looking forward to dinner for the next two nights now!
